Chef Alex from ‘Vegetarian for Life’ demos his delicious autumn recipes live on Zoom, especially for u3a members.
Thank you for joining me for an intrduction to vegetarian and vegan cookery. In the session I will be focusing on those new to the world of all things plant based. I will be taking you through some of questions you may have when catering without meat for the first time. I will be making a few of my favourite dishes I'm sure you will enjoy making for yourselves. On the day I will be make a chunky clam style chowder, a powder house salad, ( yes it's true some vegetarians do eat salad), an easy chickpea curry and to finish off a delicious pistachio cake. I love making soups and I made this for the first time last week. It is based on the American style chowder but without any of the fish. If you want to get a fish subtle flavour with this soup add a little nori. Either way it is delicious.
Fun fact, I have been having a salad on my birthday for the past 40 years! Almost anyway. This is one of my favourites containing a bit of every thing.
This simple curry can be made mild and creamy or hot and spicy depending on your taste.
And to finish off this delicious pistachio cake. I have had this cake as my birthday cake for the past 16 years. Worth the effort making it!
Biography:
Alex joins us from Vegetarian for Life a charity that supports older vegetarians and vegans. Alex, along with the other chefs in the team, trains chefs, catering staff, managers, carers, families and of course older vegetarians too. Previous to working for Vegetarian for Life, Alex was the Principal Tutor at The Vegetarian Society Cookery School. Alex developed recipes, trained and inspired chefs as well as home cooks in a range of culinary skills and cuisines.
